Blueberry Walnut and Cream Cheese Muffins

Looking for a new treat to enjoy with your morning coffee? These muffins will be the perfect complement to just that with the sweet flavors of the apple and cream cheese along with the crunch from California Walnuts.

Ingredients:

  • Muffins
    • 2 cups All-Purpose Flour
    • 1 tsp Baking Powder
    • 1/2 tsp Baking Soda
    • 1/2 tsp Salt
    • 1/2 cup Unsalted Butter (room temperature)
    •  1 cup Granulated Sugar
    • 2 Eggs
    • 1 tsp Vanilla Extract 
    • 1 cup Blueberries (finely chopped)
    • 1/2 cup California Walnuts (chopped)
  • Cream Cheese
    • 6 ounces Cream Cheese (softened)
    • 1/4 cup Granulated Sugar
    • 1 Egg Yolk
  • Crumb Topping
    • 1/3 cup Light Brown Sugar (packed)
    • 1 tsp Ground Cinnamon
    • 1/4 cup Butter (melted)
    • 2/3 cup All-Purpose Flour

 

Instructions

  • Step 1
  • Preheat oven to 375 degrees. Line a 12-cup muffin pan with muffin liners.
  • Step 2
  • In a medium bowl mix flour, baking powder, baking soda, and salt in a medium bowl. Set aside.
  • Step 3
  • In a large bowl, beat together; butter 1 cup granulated sugar, and eggs until smooth. Mix in vanilla extract. Stir in blueberries and walnuts.
  • Step 4
  • Gradually add the flour mixture to the wet ingredients and mix until combined. Set aside until ready to assemble.
  • Step 5
  • For the filling, beat cream cheese, 1/4 cup granulated sugar, and the egg yolk until smooth. Set aside until ready to assemble. 
  • Step 6
  • For the topping: add the brown sugar, cinnamon, and butter to a small bowl and mix with a fork. Add the flour and continue to mix until it starts to become a crumb-like texture.
  • Step 7
  • To assemble: add 1 tablespoon of the batter into the bottom of each muffin liner. Layer 1 tablespoon of the cream cheese mixture on top of the muffin batter in each layer. Add another layer of the muffin batter to the top of the cream cheese layer and fill to the top of each muffin liner.
  • Step 8
  • Top each muffin with the crumb mixture and lightly press into the top.
  • Step 9
  • Bake for 20 minutes or until tops are lightly browned. Let them sit for 5 minutes and then remove to a wire rack to cool.
  • Step 10
  • Once cooled, eat then enjoy!
