Walnut Horchata Martini

This horchata-inspired martini is delicious! Serve it on the rocks or with a cinnamon stick for the ultimate dessert cocktail.

Ingredients

  • Walnut Milk
    • 1 cup Walnuts
    • 3 cups Water
    • 1 tsp Vanilla Extract
    • 1 tsp Sweetener of Choice
    • 1 pinch of Salt
  • Horchata Martini
    • 3 oz California Walnut Mi
    • 1.5 oz Choice of Vodka
    • 1.5 oz Coffee Liqueur
    • 1 pinch of Ground Cinnamon
    • Cinnamon Sticks for garnish
 

Instructions

Walnut Milk

  • Step 1
    • The first thing you need to do is soak your walnuts (one cup) for at least an hour, but it’s better if you let them soak overnight. Just place your walnuts in a container, cover them with water and let them soak in the fridge. You may notice that the water can turn brown—this is unique to walnuts and totally normal! After they’ve been sufficiently soaked, toss that water out and give them a good rinse. Why is this step important?
    • There are really two reasons. Soaking the walnuts softens them, making them easier to blend. But, perhaps even more importantly, it also helps release their tannins, leaving a softer, buttery nut taste. Worth the extra prep time!
  • Step 2
    • Combine your soaked, rinsed and drained walnuts with three fresh cups of water; one tablespoon of honey, agave nectar or maple syrup; one teaspoon of vanilla extract; and a pinch of kosher salt. Blend on low for at least two minutes until your concoction is very smooth.
  • Step 3
    • After you’ve blended the milk, you may want to strain the pulp. You can certainly use muslin or cheesecloth (or even a coffee filter in a pinch) but consider investing in a “nut bag.” The ones made with nylon are the easiest to clean, but they also are made from cotton or hemp.
  • Step 4
    • Your homemade California walnut milk is super yummy because you made it with just a few simple ingredients. Enjoy!

 

Walnut Horchata Martini

  • Step One
    • Fill a cocktail shaker with ice. Add walnut milk, vodka, liqueur, and cinnamon
  • Step Two
    • Place the cap on the shaker, and shake until the outside of the shaker is very cold. Strain into a glass of choice.
  • Step Three
    • Garnish with a pinch of cinnamon or cinnamon stick if desired.
